Week 36: Mall Court Tofu OR Chicken
The best recipes really come down to the sauce.What you need:
1 TBSP Olive Oil
1 Pack Tofu (or 2lbs chicken breast)
1 tsp ground ginger
1/2 tsp garlic powder
1/4 tsp black pepper
1/3 cup soy sauce
1/3 cup cranberry juice (bourbon, or apple juice also works!)
1/2 cup water
1 TBSP ACV
1/4 cup brown sugar
1 TBSP cornstarch dissolved in 3 TBSP cold water

Drain and press the tofu or cut the chicken breasts into 1 inch pieces.
In a small bowl combine the ginger, pepper, soy sauce, cranberry juice, water, garlic, ACV and brown sugar. Set aside.
In a large saute pan or skillet heat the oil on medium-high heat.
Add the tofu or chicken and cook about 5-6 minutes. Stir every 2 minutes to ensure it browns evenly. If you're using tofu, remove the tofu from the pan and set aside.
Add the sauce mixture and stir well. Allow the liquid to come to a boil and then turn the heat down to medium. Simmer uncovered for about 10 minutes.
Add in the cornstarch liquid and stir briskly. The sauce will thicken quickly.
