These beans may be prepared whole, eaten raw, or lightly steamed or sauteed. Use in salads or saute with other vegetables and may also be canned and quick-pickled. A great addition to stir-fries or roasted with garlic, balsamic vinegar, and oil.
Beans provide a good source of vitamin C, iron and immunity-boosting folate. One-half cup cooked beans contain about 22 calories.
