Week 22: Spicy Fish Tacos

Fish tacos made with oven baked Alaskan cod (wild-caught), smoky organic spices, abundantly nutritious sprouts, & a deliciously refreshing sauce.

Your whole family will love these tacos! Oy vey!


For the fish:
 


Recipe: 
Preheat the oven to 400°F
Pat the thawed cod fillet's dry and rub with adobo seasoning mixture. 
Bake in the oven for 10-12 minutes.


For the spicy corn: 
2 cloves of Garlic (minced)


Recipe: 
Heat a skillet over medium heat with butter. Add in your chopped red onion and corn kernels. Cook, stirring occasionally, for about 5 minutes until fragrant. Add in the chili powder and cook a few minutes more until there is some color on the corn and the onions have softened. Add your minced garlic and cook for another minute. 


Sauce:


Recipe:
Stir the ingredients together and salt and pepper to taste. Chill until ready to serve.


Assembly: 
Lay out your tortillas and top with the Parsley Lemon Sauce. Add your cod, corn, and fresh extras (ex. thinly sliced cabbage and sprouts), add a side of chips and salsa and ENJOY!
