Week 47: Pumpkin Spice Pancakes
Pumpkin Spice PancakesPreheat your skillet on medium-low heat. Do not add butter to the skillet until you are ready to cook your pancakes.
What you need:
.5 cup of Coconut Oil
2 Eggs
1 tsp Salt
2 tsp Vanilla
2 TBSP Baking Powder
2 TBSP Sugar
1 tsp Cinnamon
.5 tsp Clove
.5 tsp Ginger
.5 tsp Nutmeg
In a large bowl mix in each ingredient in the order shown. Immersion blend until smooth. The batter should slowly run off of your spatula.
Lightly butter your skillet.
Ladle the batter into the middle of your skillet, cover, and cook for 1.5 minutes per side.
Drizzle with Syrup and ENJOY!
