Week 37: Coffee and Cinnamon Apple Scones
So it's about that time of the year.... We are half way through September now, and the mornings have been cool and foggy lately. So why not wrap yourself up with a couple blankets, a nice cup of coffee or tea, and pair that with these delicious homemade scones for breakfast sometime soon?
Ingredients:
1 cup Plain or Greek Yogurt
1 tsp Baking Soda
4 1/4 cups Flour
1 cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
1 cup Plain or Greek Yogurt
1 tsp Baking Soda

1.5 TBSP Cinnamon
Preheat oven to 350.
Mix 1 cup of yogurt and 1 tsp of baking soda in a small bowl. Set aside to let it pouf up.
In a large bowl whisk together 4 1/4 cups of flour, 1 cup of sugar, 2 tsp baking powder, 1/2 tsp salt, and 1.5 TBSP of cinnamon.
Using your fingers mix in 1 cup of cold butter to your flour mixture until you get pea-sized doughy morsels.
Whisk the egg up in a separate cup and pour it into the yogurt and baking soda mixture.
Then, add your yogurt mixture to your dry mixture. Add in your apple chunks.
Divide your mixture into 3 equal circles that are about 1" thick and 6" in diameter. The mixture will be pretty sticky. You can dust flour on your hands to make it easier to work with, but you don't want too much flour or that would make a dry scone.

Cut 6 triangles out of each circle. To do this make 1 horizontal cut through your circle, then make an X. You will get 6 pieces from the singular flat circle.
You will have 18 scones total by the end.
Bake on a parchment-lined baking sheet for 18-20 minutes until scones are very lightly browned.
