Week 36: Chickpea Burger

Good day! Have you had the opportunity to try a chickpea burger? I'm not talking about the store bought versions... I mean.. a real homemade chickpea burger made with real food and not stuffed with a bunch of names you can't read that food scientists came up with to make the product more this or that. Try this on your next meatless Monday and let us know what you think!


What you'll need:

For the Tangy Sauce:
3/4 Cups Raw Cashews (soaked in hot water for 20 minutes and drained)
1/2 Cups of Filtered Water
1 TBSP Ketchup
1 TBSP Honey or Maple Syrup
1 tsp Turmeric
1/2 tsp Salt
1-2 Pickles (diced)


In a food processor combine all ingredients except pickles. Process until smooth and then stir in the diced pickles. Adjust seasoning to taste and store in the fridge until ready to eat (up to 1 week).

For the Chickpea Burger:
Egg
1 Cooked and Cubed Sweet Potato
1 Can of Garbanzo Beans
1.5 Cups Rolled Oats
1 tsp Turmeric
1/2 tsp Chili Powder
Juice of 1/2 Lemon
A few cracks of Pepper


Preheat the oven to 400 and line a baking sheet with parchment paper.
In a food processor combine all of the ingredients and pulse until well combined. Form the mixture into 6 balls and flatten them into a patty sheet on the baking sheet. Bake for 15 minutes and flip and again for another 10-15 minutes.

Serve on buns and top with sauce, avocado, arugula, micros, and sliced cherry tomatoes, alongside some fries!
