Week 33: Granola Bars!!

Granola Bars:
What you'll need:
2 1/2 cups old fashioned rolled oats
1/2 cup nuts
1/4 cup honey
1/3 cup coconut sugar
3/4 cups mix-ins 


Preheat the oven to 350. Fill a 9" square baking dish with parchment paper. Set aside.

Place the oats and nuts on a rimmed baking sheet and bake for 8-10 minutes until lightly toasted.

While the oats are toasting add honey, butter, and brown sugar to a saucepan over medium heat until the butter melts and sugar is dissolved- stirring constantly. Let the mixture bubble, while stirring, for one minute and remove from the heat, and add the vanilla to the mixture.

Place the nuts and oats in a large bowl and pour the butter mixture over it. Add any of the extras (except for chocolate - wait 15 minutes so it doesn't melt) and stir to combine. 

Place all of the oat mixture in the 9" square baking dish and use a rubber spatula to press the mixture into the pan. Press very firmly to ensure your bars do not crumble.

Chill the bars for 2+ hours, remove from your pan, cut and serve!

You can store these in an airtight container in the fridge for up to 10 days. You can also freeze them!
