Week 29: Sausage Pepper Sandwiches & Potatoes w/ Buttered Beans
Here is a quick dinner that your family is sure to devour. Savory pastured raised pork sausage or any delicious vegan alternatives sautéed with fresh local peppers and onions. Pair it with oven roasted fennel and organic red potatoes and buttered beans. Add some sauerkraut, relish, or mustard for some extra pizazz, and vwa-lah, dinner is served!
For the Fennel Potatoes:
Salt
Recipe: Preheat the oven to 450 degrees. Roughly slice the fennel, dice the potatoes (small) and toss in a small amount of oil (enough for the salt to stick). I like to also chop up the fennel fronds and toss those in as well. Bake for 20 minutes, stir, and cook about 10 more minutes. If you like your potatoes crispier, remove the fennel and bake the potatoes for an additional 10 minutes.

Recipe: Saute the Peppers and Onions on medium/low in a bit of Butter until aromatic (about 10 minutes). [While these are cooking start your skillet for the beans.] Set aside your peppers and onions and cook your bratwurst or meat alternative in the same pan according to package directions until the internal temp is 165 degrees. For extra flavor, remove the sausage from the pan and skillet the inside of the buns in the pan until they crisp up a bit.

Recipe: Melt the butter in the skillet for about 5 minutes on medium, add in the beans, peas, and cook until you get some color (about 10 minutes). Add in some fresh cracked pepper and you're done! ENJOY!
