What you need:



Grillable Veggies - eggplant, zucchini, peppers, onionsetc. brushed with olive oil
Instead of grilling, you can roast the veggies on 400 for 20-30 minutes, flipping once halfway through.


Dressing- Basil Pesto
2 handfuls of fresh basil
2 handfuls of arugula/kale
2 cloves of garlic
1/4 cup pine nuts
1.5 TBSP lemon juice
1/2 cup hemp seeds
salt to taste
1/4 cup olive oil added to a food processor and blended until smooth.
