Week 17: Shrimp with Avocado & Mashed Potatoes
Spicy Shrimp1lb shrimp (thawed, peeled, and patted dry)
1 small bunch of cilantro
1 lime (juiced)
1 clove of garlic
1 tsp paprika
.5 tsp salt
2 TBSP oil
**Add the marinade ingredients to a large bowl and toss the shrimp, evenly coating them. Set aside while making the dressing and starting the potatoes.
Avocado Dressing
2 cloves of garlic
1 lime (juiced)
1 avocado
1/3 cup mayo
**Add ingredients to a food processor and blend until smooth, Store in the fridge until ready to serve.
Mashed Potatoes
1/2 cup yogurt
2 TBSP butter
**Cut the potatoes into quarters (skin on) and boil for about 20 minutes. Add the butter, yogurt, salt and pepper, and mash them.
When the potatoes are almost done heat a skillet on medium, high heat. Add butter and sear your shrimp for about 2 minutes per side.
When your shrimp are sizzling plate up and enjoy!
