Week 43: Orange Cauliflower Over Rice
If you have never tried orange cauliflower then you should definitely give it a try! The breading on the outside gives it a crunch and the orange sauce gives it some pizazz. The orange sauce is so tasty over rice and vegetables. You can also use this same method of breading to bread tofu or chicken. The aquafaba replaces the eggs**

1 cup rice
Liquid from 1 can of chickpeas (aquafaba)
1 cup + Tapioca Starch
1/2 cup Flour
2 tsp Salt
1 tsp Pepper
1-2 Cauliflower
Optional add-ins: Eggplant, Sliced Carrot
Cook the rice according to package directions.
Set up the dredging station: Drain the chickpea liquid (reserving the chickpeas for another recipe). Mix 1 cup of the Tapioca Starch, flour, salt and pepper in another bowl.

Cut up your cauliflower into bite-sized pieces.
Preheat the oven to 450.
Coat the cauliflower in flour, dredge them in the aquafaba, and then put them back in the flour. If you are adding any extra veggies just make sure to coat them in oil before putting them on the lined baking sheet.
Bake for 20 minutes on a parchment lined sheet until golden and crisp. Using aquafaba will REALLY step up your roasted veggie game and give you texture similar to that of Orange Chicken.
While the cauliflower bakes, it's time to work on your sauce!
Orange Sauce
1/2 tsp Ginger
1/2 tsp fresh Cayenne pepper or 1/4 tsp dried Cayenne Pepper
1 cup Orange Juice
2 TBSP Soy Sauce
1 TBSP Apple Cider Vinegar
1/4 cup Sugar
1/2 tsp Hot Sauce
1 TBSP Tapioca Starch
2 TBSP Water
Heat 1 TBSP of oil in a small saucepan over medium heat for about 30 seconds, add your garlic, ginger, and cayenne. Cook until fragrant- about 30 seconds. Add the orange juice, soy sauce, vinegar, sugar, and hot sauce. Reduce the heat and bring to a simmer. Taste and adjust your seasonings. We generally add a splash of honey for extra sweetness. Mix 1 TBSP of the Tapioca Starch in cold water and stir it into the sauce. When the sauce has thickened remove it from the heat.
Fluff your rice, toss the baked cauli into the orange sauce and serve immediately.
