Week 42: Roasted Veggie Sandwich
Makes 4 sandwiches.
Prep your veggies!
1 Quart of Fairytale Eggplant sliced in half lengthwise.
1 Bell Pepper (sliced into 4 pieces)
1 Red Onion (thickly sliced into rings)
1-2 Squash (cut in half and thinly sliced into long pieces.
Place veggies on a silicone or parchment-lined baking sheet, add a generous amount of oil, some salt & pepper and roast for 20 minutes on 425. If you're making the Garlic Aioli Sauce you can cook the garlic with your veggies! Simply put the entire bulb of garlic in some foil, add oil, tightly seal, and place on your baking tray.
After 15-20 minutes flip veggies and roast for an additional 5 minutes.
1/2 tsp Worcestershire Sauce
Blend ingredients in a food processor until smooth. Store in the fridge in an airtight container for up to a week.
Now time for sandwich assembly!
