Week 1: Easy Chorizo Taco
Super easy weeknight meal or lunch!What you need:
Canned Refried Beans or Black Beans (If you're using dried black beans you'll want to have those ready to serve as you will just be warming them for this dish).
Cheese
Saute your corn and peppers (with a pinch of salt and dash of oil) until most of the liquid has boiled off and they have some color. Add in your onions and cook for another 3-5 minutes until they become translucent. Add in your cooked black beans here and saute until warmed through. If you're using refried beans you can skip this step.
Remove the veggies from your skillet and cook your chorizo.
Warm your tortillas if you want!
After your chorizo is properly cooked it's time to assemble!
Get your flour tortillas and top with chorizo, veggies (and refried beans if you're using them), cheese, salsa, and guac.
