Hard Wheat Turkey Red

Turkey Red is a heritage heirloom hard red winter wheat. It originated in Turkey and was introduced to Kansas in 1873, carried by Mennonite immigrants from Crimea in the Ukraine, fleeing Russian forced military service. Heritage wheat refers to the varieties of wheat that were grown before the 1940's when wheat began to be hybridized for higher yield. It is theorized that the changes made during hybridization also changed the protein and gluten structure of the grain. This change has made hybrid grain more difficult to digest and it is thought to be the cause of wheat-intolerance in many people. Turkey Red is high in protein and can be used for any bread recipe or all purpose recipes.

Stone ground flour is superior to conventional white flour in both flavor and nutrition. Unlike white flour it contains the wheat germ which is the most nutritious part of the grain. It also contains bran that is high in minerals and fiber.

Older grain varieties offer many benefits. Not only do they have more flavor than modern grains, they have often been shown to be more digestible too. While not gluten free, many people who have reactions to modern wheat often report not having the same reaction to older wheat varieties.
