Tongue has a mild slightly fatty taste and texture that is very similar to Corned Beef on the front end and a nice fatty Roast Beef on the back end. Tongue can be boiled, pickled, roasted, or braised in sauce. It is found in many national cuisines, used for taco fillings in Mexico, open-faced sandwiches in the United States.
