Ilan’s Raw Chocolate was founded in 2015 by Ilan and Merav Rosenblit in a kibbutz near Nazareth, in northern Israel. As a raw chocolate workshop, we are committed to high quality ingredients and the satisfaction of chocolate connoisseurs. We seek to meet the needs of health conscious dessert lovers and the adventurous tastes of the modern day “foodie” with an innovative approach to raw chocolate.
Before 2018, you could only purchase this one-of-a-kind chocolate in Israel. Today, this delicious treat is also handcrafted in Cincinnati, OH due to a unique partnership between chocolate innovator and chocolate connoisseur.
Ilan met Cebastian Hilton, now current partner of the US production of Ilan’s Raw Chocolate, on a tour in Israel. Intrigued by Ilan’s artisan method for making this delicate treat, he inquired more into Ilan’s story.
After many conversations and a deepening friendship, it was decided that learning Ilan’s unique hand-tempering process in Cincinnati, OH would be the most effective way of bringing it into the US market. Ilan and his wife, Merav, came to Cincinnati for in-depth training in 2018 to show the complex and secret method of production. From then on, the US team has been hand-tempering chocolates in small batches, just like Ilan, from high quality, naturally healthy ingredients.
