New Moon is North Sky Farm's Maker's Reserve cheese, produced in limited quantities and made with all organic ingredients.

The cheese is geo-ripened and hand-dusted in ash using an old traditional method that develops a beautiful, striking rind, dark and matte on the outside, giving way to a bright, pale interior beneath. It's where the name comes from: dark and dusted above, bright below, just like the new moon. The flavor and texture are smooth throughout, savory and easy to eat, with none of the sharp edges you might expect from a cheese with such a dramatic look.
