Sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast. The bread has a sour taste and better keeping qualities than bread made with baker's yeast, due to the lactic acid produced by the lactobacilli.

The source
Broken Rocks Cafe
Glen and Lisa Grumbling opened Broken Rocks Café in downtown Wooster, Ohio, in 2000. They named it for a spot on Michigan’s Lake Huron shoreline where their relationship began.
That place contributed more than the name: Glen gathered wild grapes there and used them to make the starter for the café’s sourdough breads. Bread remains part of a scratch kitchen that prepares food fresh each day, with dishes made to go alongside it.
A loaf gives you several ways into a meal. Slice it for sandwiches, toast it for breakfast, or bring it to the table with soup. You can leave the rest of dinner alone and still have something worth passing around.
