Parsley has been used for culinary applications for centuries. Parsley stems are traditionally used in a ‘bouquet garni,’ a bundle of herbs classically used to infuse flavor into brines, sauces, soups and stocks. The leaves are typically reserved for garnish. Can be chopped and added to soups and stews at the end of the cooking process, to impart a fresh green flavor. Add freshly chopped Parsley to potato salads and coleslaws, green salads and grains. Parsley adds a fresh flavor to tomato sauces. Parsley will lighten the intensity of garlic or the overpowering aromas of a fish in a dish.

Despite often being relegated to garnish status, Parsley is nutrient-rich and contains minerals that are beneficial for good health. Parsley contains vitamins A, B, C and K, along with minerals potassium, iron, and copper. Also a good source of folate.

Chef's Harvest

Matt Yoder’s interest in growing things started in childhood and eventually became Chef’s Harvest. He built the lettuce business through research, formal training, and work with the Ohio Agricultural Research and Development Center and Ohio State University Extension.

His lettuce grows hydroponically in a system supplied by five natural springs on his land. The greenhouse operates without electricity piped in, reflecting Matt’s Amish practices and the particular system he developed for the farm.

For lunch, try the lettuce with sliced cucumber, a little cheese, and a dressing you like. Or tuck a few leaves into a sandwich. Give it a place in the meals you already make, and see which use becomes the regular one.
