Maple syrup was first collected and used by the indigenous peoples of North America, and the practice was adopted by European settlers, who gradually refined production methods.

Maple syrup is popular as a condiment for pancakes, waffles, French toast, oatmeal or porridge. It is also used as an ingredient in baking and as a sweetener or flavoring agent. Culinary experts have praised its unique flavor.

Sugar Hill Maple Products

Ivan Erb Family's Organic Dairy Farm is nestled in a hollow surrounded by sugar maple trees. Family members and neighbors tap the trees in late winter right before the sap begins to "run." That sap flows by gravity through polyethylene tubing down the sloped hillsides and into large stainless steel tanks adjacent to the sugar shack. John Henry Erb and his brothers process the sap in the sugar shack through a reverse osmosis system, removing substantial portion of the water, and then into an evaporator where the sap is concentrated into syrup. They bottle the syrup while hot which draws a natural seal on the container giving a shelf-staple product.
